FAMILY
In 1961, Livio and his father Sabatino buy the Innocenti company, Citille di Sotto, a jewel set in an area that has always favoured viticulture and olive growing. With the passion passed down from generation to generation, they have wisely renewed and expanded the existing vineyards and olive groves, overcoming the challenges posed by nature and investing in modern and sustainable cultivation techniques. Today the Innocenti company is run by Massimo and Gianni, sons of Livio, heirs of passion and deep respect for the land that father and grandfather have proudly handed over to them.
CURIOSITY
In 2017 Livio decided to produce a very particular wine because of the vintage and the vinification technique adopted, that of ``appassimento``. The grapes were selected in the vineyard, by Livio personally and then left to dry in the plant to be fermented during the winter. This technique drastically reduces the sugar content, while producing complex aromas. The fermentation was followed by a long aging in French oak barrels and an equally long aging in bottle.
The result of this process is today a dry wine with strong hints of sweet grapes that makes it particularly suitable to be tasted at the end of a meal or as a meditation wine.
And to give credit to the long work of Livio in the last years of his life, the children have decided today, to personally sign each single bottle produced in limited number.
